Aromas: The nose is fragrant and perfumed, lifted by aromas of violets and rose petal. A concentrated core of dark fruits is balanced by notes of blueberry, redcurrant, and boysenberry, forming the wine’s primary fruit profile. Layers of star anise, Sichuan pepper, and cinnamon quill contribute subtle spice-driven complexity, while faint hints of petrichor add further nuance.
 Flavours:

The palate is layered, plush, and intensely concentrated, centered around flavours of blueberry and mulberry. Vibrancy and freshness carry through, supported by a natural, finely woven acidity. A graphite and mineral thread runs beneath the fruit, uniting the wine’s primary notes and structural drive, and culminating in a polished, composed finish.

 

Winemakers Highlights

The mild summer conditions of 2021 yielded wines with excellent varietal clarity, remarkable length, and impressive precision. The preceding winter in 2020 was characteristically wet and windy, with substantial rainfall across July, August, and September, bringing totals close to the seasonal average.
Chardonnay was the first to break bud in the final week of August, followed by Riesling and Cabernet through late August into September. April brought intermittent rain, while sunny, mild days and cool nights enabled the red varieties to develop beautifully ripe skin tannins, along with concentrated flavor and balanced sugar levels. Harvest for Cabernet Sauvignon and Shiraz commenced in the last days of March, with the final estate parcels brought in on April 18.

Fermentation took place in a mix of open and closed vessels, with 20% whole bunches included to enhance lift and vibrancy. The fermenting must was plunged and pumped over daily before being transferred to new, one-year-old, and two-year-old barrels for malolactic fermentation. Malolactic conversion occurred entirely in barrel, and after six months the individual components were blended and returned to barrel for a further twelve months of maturation. Following assemblage, the wine was gently fined and prepared for bottling.
