Winemaker's Comments
This wine is produced from only the top 25% of Cabernet Sauvignon fruit available from the Serafino McLaren Vale vineyards. Once destemmed, the grapes are fermentation period. Tannin and colour extraction is achieved through regular pump overs of the fermentation cap. The wine is then pressed, allowing it to finish the malolactic fermentation prior to spending up to one year in new and one year old French and American oak hogs head.
