Winemaking Highlights
The 2020 vintage was extremely challenging, with intense heat and bushfires burning across the region. While this wasn’t great for quantity, the fruit that survived was some of the best we have ever seen in the Adelaide Hills. The fruit set beautifully and was harvested in the cool of the night to persevere it’s freshness.
The grapes were de stemmed, chilled and gently pressed into stainless steel vessels. The juice was settled and racked for a long cool fermentation. Once stabilised it was filtered to retain brightness and freshness of flavours.
