The Lamy family has worked the vines in St.Aubin since 1640. Today the domaine isrun by Olivier Lamy who recently took over from his father. The domaine produces around 8,500 cases of red and white wine from their 16.5 hectares; the vines are spread around the Côte de Beaune villages of Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Santenay. Since 1997 all production has been domaine-bottled; the output is high quality & their Saint-Aubins in particular are often superior to wines from more fashionable villages.
In recent years Olivier has reduced the amount of new oak (and increased his use of larger barrels), increased the amount of whole bunch in the reds, experimented further with high-density plantings and become known for being one of the first to begin picking. He now has two separate cellars for the reds and whites so that they can enjoy bespoke élevage. His attention to detail in both the vineyards and the cuverie is inspiring.
