The Vineyard
This Gavi comes from the following vineyards: the first is situated in the area of Gavi, of 0.8 Ha and the second in Novi Ligure, of 1,6 Ha. Both of them have a South-West exposure at a height of 240 meters above sea level. The area is slightly hilly, the soil is marl – calcareous.
These vineyards are composed exclusively of Cortese. The training system is the traditional Guyot with 5.000 vines per hectare: The vines have an average age of 8 years. The last harvest took place from the 10h – 12th September.
Winemaking Techniques
The wine making process consists of a soft pressing of the grapes and a cold decantation for 24 hours. Therefore, for 90% of the must, fermentation takes place at a controlled temperature between 18 and 20°C, for 50 days. Then it is left to rest on its own yeasts, for another 80 days, whilst the 10% of the must is fermented in wooden casks, and after 90 days, it is then added to the 90%. Once assembled it is left in the bottle for 2 months.
